I love spring rolls, I've made them three times this week! And they are so easy to make, just do the prep and you can make spring rolls all week. Kristin of Iowa Girl Eats gives us a wonderful step-by-step on fresh spring rolls with a great peanut dipping sauce.

This winter, I've become absolutely obsessed with making hot chocolate from dark chocolate shavings, not cocoa powder. (I blame my new-found snobbery on my in-laws, who gave my husband and me a bag of special cocoa chocolate for Christmas last year.) If it were as easy to throw together as powdered cocoa in a pouch, I'd probably drink fancy hot chocolate for desert every night! That's why I love this hot chocolate on a stick recipe from Kristi at 30 Pounds of Apples. She makes it incredibly easy to have rich, delicious hot cocoa on an instant-gratification timeline.

Enchiladas are one of my favorite meals, but like Laura of Eat! Craft! Live!, I can never get the rolling part quite right when making them at home. Her ingenious solution by making a layered enchilada casserole is something I'm going to put on our meal-planning rotation immediately. I love, too, that she shows how easy it is to modify the recipe to your tastes.
